In my previous post about the H-word where I was wondering if “food could just be food”, I wrote about my daughter eating chicken veggie stew. I also posted this video of her chowing down. The number one question I received after that post was about the recipe I used for the stew. It seems the moms of babies don’t struggle with the “food is just food” concept, however I have definitely had some great conversations with mothers of older children. All of these conversations are helping me further define and refine my message, and I LOVE IT!!
So about getting you guys that Country Captain Chicken recipe… that’s a funny situation. Me writing about cooking is a little like my husband writing about how pregnancy feels. Not the most appropriate. You see, I’m not really a cook. I have issues with following recipes. Yes, as a dietitian, we’re forced required to take all kinds of cooking classes in undergrad. That experience made cooking very academic, and to this day, I don’t understand the *joy* of cooking that everyone talks about. But I do have hope that I’ll get there one day.
If I am cooking this dish for my husband and I, I will actually try to follow the recipe very closely. But most of the time this recipe is used in the same way that I use smoothies, to get rid of produce before it goes bad. When I made this today, I didn’t follow the recipe but instead just used the ingredients that I had on hand. The only thing I had to buy were the tomatoes. No matter what produce goes in, Edie seems to dig this dish. So I’ll keep making it until she starts feeding a vast majority of it to the dog, then I’ll stop.
One more side note. This recipe is from a Paleo cookbook. We do not follow a Paleo diet. I think it is neither good nor bad. When I post a recipe from the Paleo diet, it is because we like the recipe not because I am promoting the diet. And to balance it out, we have a guest blogger sharing her vegetarian recipe next week.

Besides the tomatoes and onions, all the other vegetables change based on what’s left over in the fridge. Today we had a few carrots, broccoli, cauliflower. I had currants and slivered almonds left over from the last time I made this recipe.

After prepping the veggies, mix the dry ingredients in a bowl to dredge the chicken in.

I tend to use coconut oil when it doesn’t matter if the dish tastes like coconut. Otherwise, I use butter. And I forgot that I could have done this part straight in the braiser.

After chicken is browned, I add the veggies and curry powder.

I leave it on the stove for about 5-10 minutes stirring occasionally. Then I place the dish in the oven for 25-30 minutes.

And like I mentioned, I tend to have problems following recipes. You’re supposed to add currants and cook for another 5 minutes. I just put the nuts and currants in and let it sit until it was cooled.
